Quail
Quail is an moderately easy dinner. Made with 6 quail, 2 tbsp. chopped celery, 1 1/2 sticks butter, 1 tsp. freshly ground black pepper and 2 small white onions, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Melt butter in heavy frying pan.
Brown quail and remove from pan.
Saute other ingredients, except sherry, for 3 minutes.
Then add the quail and water.
Cook slowly, covered, for 1 1/2 hours. Baste and add a little additional water as needed.
Uncover and add sherry; cook for 30 minutes.
Good served with herb rice.
