Pumpkin Soup
Pumpkin Soup is an moderately easy dinner. Made with 2 small pumpkins (about 2 lb. each), 2 large yellow onions, chopped, 2 cloves garlic, peeled and chopped fine, 2 tbsp. peanut oil and 8 c. vegetable broth, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.
Peel the pumpkins and remove the seeds.
Dice the peeled pumpkins and set aside.
In a large pot, brown the onions and garlic in the peanut oil.
Add the pumpkin, vegetable broth and optional pepper and season to taste.
Cover and cook until somewhat smooth and thick.
Mash some of the pumpkin with a wire whisk to help thicken.
Cook approximately 1 to 2 hours.
