Pumpkin Roll
Pumpkin Roll is an moderately easy dinner. Made with 3 eggs, 1 c. sugar, 2/3 c. pumpkin, 1 tsp. lemon juice and 3/4 c. flour, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Beat eggs, sugar, pumpkin and lemon juice on high speed for 5 minutes.
Then add flour and spices.
Beat slightly.
Spread into a 15 x 10 x 1-inch pan lined with wax paper.
Top with 1 cup finely chopped nuts (optional).
Bake at 350Β° for 15 minutes. Turn onto towel sprinkled with powdered sugar.
Starting at end, roll towel and cake together.
Leave until cool.
