Pumpkin Roll
Pumpkin Roll is an moderately easy dinner. Made with 2 large eggs, 1 c. white sugar, 2/3 c. pumpkin, 1 tsp. lemon juice and 3/4 c. self-rising flour, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Beat eggs about 5 minutes; add sugar gradually.
Then add pumpkin, lemon juice, cinnamon, pumpkin pie spice and nutmeg. Blend together with mixer, then add flour.
Mix together well. Pour into greased and floured 15 x 10 x 1-inch jelly roll pan. Top with chopped pecans.
Bake at 375Β° for 15 minutes.
Sprinkle with powdered sugar and turn out onto towel; sprinkle again with powdered sugar.
Starting at narrow end, roll up.
Cool about 1 hour; unroll and spread on Cream Cheese Filling.
