Pumpkin Roll
Pumpkin Roll is an moderately easy dinner. Made with 3 eggs, 2/3 c. pumpkin, 3/4 c. flour, 1/2 tsp. cinnamon and 1 c. chopped walnuts or pecans, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

At high speed for 5 minutes.
Gradually add sugar and lemon juice.
Stir in pumpkin. Sift together flour, baking soda, cinnamon pumpkin mixture. Spread on a greased and floured jelly roll pan (15 x 10 x 1-inch). Sprinkle top of the batter.
Bake 15 minutes at 375Β°.
Place a dish towel on top and turn cake out, then starting at the narrow end, roll towel and cake together. Cool and unroll.
Spread filling over cake.
Roll again and chill.
