Pumpkin Quick Bread
Pumpkin Quick Bread is an moderately easy dinner. Made with 1 1/2 c. flour, 2 tsp. pumpkin pie spice, 1 1/2 tsp. baking powder, 1/2 tsp. cinnamon and 1/4 tsp. salt, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Combine first 5 ingredients and set aside.
In a large bowl, beat eggs for 2 minutes. Add both sugars.
Beat until well combined. Beat in pumpkin, butter and juice until blended.
Pour batter into prepared pans (4 to 5 mini or one 9 x 5-inch) coated with nonstick spray. Bake until toothpick inserted in center comes out clean at 350Β°.
Bake mini pans 30 minutes; 9 x 5-inch pan 50 to 55 minutes.
