Pumpkin Pudding
Pumpkin Pudding is an moderately easy dinner. Made with 1/2 stick oleo or butter, 1 c. sugar, 1/2 c. flour, pinch of soda and 2 c. pumpkin (one 1 lb. can), this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Melt butter in baking dish.
Mix the remaining ingredients with an electric mixer and pour into the dish.
Then mix 1/2 teaspoon cinnamon and sugar.
Sprinkle on top of pumpkin mixture.
Bake at 375Β° for 25 to 30 minutes or until firm.
(This tends to bubble over so put in a large enough dish that will allow for this.)
