Pumpkin Pie Bars
Pumpkin Pie Bars is an moderately easy dinner. Made with 1 (18 1/2 oz.) yellow cake mix, 1/2 c. melted butter, 4 eggs, 1 (30 oz.) can solid pack pumpkin and 1 c. sugar, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Grease and flour 13 x 9-inch pan; set aside 1 cup cake mix. In small bowl, lightly beat 1 egg.
In large bowl, stir together remaining cake mix, melted butter and beaten egg.
Press into prepared pan.
In large mixing bowl, lightly beat remaining 3 eggs; stir in pumpkin, 1/2 cup sugar, brown sugar, evaporated milk and cinnamon.
Pour over cake mixture in pan.
To the reserved cake mix, add the remaining 1/2 cup sugar, walnuts and softened butter; mix until crumbly.
Sprinkle over pumpkin mix.
Bake 50 to 60 minutes at 350Β°.
Serve warm or cold.
