Pumpkin Pie
Pumpkin Pie is an moderately easy dinner. Made with single pie crust, 2 c. cooked pumpkin or butternut squash, 1/4 c. brown sugar, 1/2 tsp. salt and 1 tsp. cinnamon, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Into a large mixing bowl, combine pumpkin, spices and brown sugar only.
Whisk until smooth and spices are evenly distributed. Add Eagle Brand milk and eggs; mix well.
Pour into pie shell and put into oven immediately.
Bake at 425° for 15 minutes then reduce heat to 350° and bake about 45 minutes longer.
Pie will test done with a clean knife as for custards.
Cool and serve with whipped cream.
