Pumpkin Delight Cake
Pumpkin Delight Cake is an impressive dinner. Made with 1 c. rolled oats, 2 c. whole wheat pastry flour, 2 tsp. baking soda, 2 tsp. cinnamon and 1/2 tsp. ground ginger, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Preheat oven to 325°.
In large mixing bowl, combine oats, flour, baking soda, cream of tartar, cinnamon, ginger, cloves, nutmeg and allspice.
In medium bowl, mix honey, applesauce, pumpkin purée and 2 unbeaten egg whites.
Gently stir into flour mixture and mix until just blended.
Stir in raisins and dates. Gently stir in 2 lightly beaten egg whites.
Do not overmix.
