Pumpkin Cookies
Pumpkin Cookies is an impressive dinner. Made with 2 c. flour, 1/2 tsp. salt, 1 tsp. baking powder, 1 tsp. baking soda and 1/2 tsp. cinnamon, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Sift all dry ingredients.
Cream together beaten egg, sugar and shortening.
Add vanilla and pumpkin last.
Then add dates or raisins and nuts.
Beat until all blended.
(May add up to 1/4 cup extra flour if batter is too moist.)
Drop by rounded tablespoonfuls onto lightly greased baking sheet.
Bake at 325Β° until light brown, about 25 minutes.
Makes about 4 dozen cookies.
