Pumpkin Cake
Pumpkin Cake is an moderately easy dinner. Made with 4 eggs, beaten, 2 1/2 c. brown sugar, 1 (1 lb.) can or 2 c. fresh pumpkin, 2/3 c. water and 1 c. cooking oil, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Beat eggs well.
Add sugar, a little at a time.
Put in pumpkin and beat well.
Add water and oil.
Add flour, soda, nutmeg, cinnamon and salt (which have been sifted together) last.
Pour into well-greased and floured pans.
Bake at 350Β° for about 1 hour until a toothpick comes out clean.
Use 2 loaf pans or a large tube pan.
