Pumpkin Cake
Pumpkin Cake is an impressive dessert you can prepare in about 1 hour 18 minutes. Made with c. sugar, c. vegetable oil, c. pumpkin purée, eggs and c. flour, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.
Place sugar, oil and pumpkin in large mixer bowl and beat well at medium speed.
Add eggs one at a time, beating well after each. Sift flour, baking powder, soda, cinnamon and salt together and fold into batter.
Stir in nuts and raisins.
Pour into greased and floured 10-inch tube pan.
Bake at 350° for 1 1/4 hours or until done.
Do not open oven door under 1 hour.
Let cool slightly in pan before turning onto cake rack.
