Pumpkin Bread
Pumpkin Bread is an moderately easy dinner. Made with 2 1/2 c. flour, 1 1/2 c. sugar, 2 tsp. baking powder, 1 tsp. baking soda and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Preheat oven to 350°.
Butter 2 loaf pans (8 1/2 x 4 1/2 x 2 1/2-inch).
Sift the flour, sugar, baking powder, baking soda, salt and cinnamon together in a large bowl.
Stir in the walnuts. Make a well in the center of these ingredients and add the oil, eggs and pumpkin purée.
Stir until the ingredients are well blended, then fold in the raisins and rum.
Spread the batter into prepared pans and bake for 1 hour.
Allow to cool in the pans before removing and cutting.
Yields 2 loaves.
