Prune Spice Cake
Prune Spice Cake is an moderately easy dinner. Made with 2 c. all-purpose flour, 1/2 tsp. salt, 1 tsp. soda, 1/2 tsp. baking powder and 1 1/2 tsp. cinnamon, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Sift together first 7 ingredients; set aside.
In a large bowl mix soft shortening, sugar and eggs at high speed for 1 1/2 minutes.
Add cooked prunes; add sifted flour mixture alternately with buttermilk.
Beat on low speed, while scraping sides of bowl, only long enough to blend (2 minutes).
Pour batter into two prepared 9-inch pans.
Bake at 350Β° for 35 minutes.
Ice while warm with caramel icing.
