Prune Muffins
Prune Muffins is an moderately easy dinner. Made with 1 beaten egg, 1 c. buttermilk or sour milk, 1/2 c. brown sugar, 1 c. flour and 1 tsp. soda, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Mix together egg, buttermilk and sugar.
Sift together flour, soda and salt and add.
Gently fold in oatmeal and prunes.
Add shortening.
Stir as little as possible.
Fill greased muffin pans about 2/3 full.
Bake at 400Β° about 25 minutes.
I usually double this recipe as they freeze so well.
You can sour milk by heating it slightly and adding 1 1/3 tablespoons vinegar.
