Pronto Potato Soup
Pronto Potato Soup is an moderately easy soup you can prepare in about 1 hour 20 minutes. Made with bacon strips, cut up, small onion, chopped, c. 2 c. leftover mashed potatoes, cream of chicken soup and to 2 cans milk, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
In small frying pan, brown bacon until crisp.
Remove and drain on paper towel.
Add onion to drippings in pan and saute 2 to 3 minutes.
Drain fat off.
Meanwhile, in 3-quart saucepan, mix cold potatoes and soup until smooth.
Add milk gradually, stirring constantly, to desired consistency over medium heat.
Add bacon and onions.
Season with salt, pepper and parsley.
