Potato Soup
Potato Soup is an moderately easy dinner. Made with 4 slices bacon, diced, 4 c. chopped onion, 2 tbsp. flour, 4 c. beef bouillon and 3 big potatoes, peeled and thinly sliced, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Saute bacon in deep pan for 5 minutes.
Add onions; saute another 5 minutes.
Stir in flour, mixing well.
Then add bouillon slowly, stirring constantly.
Add potatoes and simmer 1 hour. Combine egg yolks and sour cream; stir into soup and simmer 10 minutes, stirring constantly.
Add parsley and chervil.
Serve hot.
Yields 6 servings.
