Potato Salad
Potato Salad is an moderately easy dinner. Made with 6 to 8 medium potatoes, salt and pepper to taste, 3/4 c. mayonnaise, 4 to 5 tbsp. prepared mustard and 2 hard-boiled eggs, chopped, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Wash thoroughly and boil potatoes with jackets on until done. Boil eggs and peel.
After potatoes have cooled for 10 to 15 minutes, water and peel.
In large mixing bowl, mash potatoes begin adding mayonnaise and mustard (use more or less according to taste).
Pour in pickle juice, salt and pepper.
Stir well.
Add chopped eggs, pickles and onion.
If too thick, add more mayonnaise.
