Potato Rosti
Potato Rosti is an easy dinner. Made with 6 - 8 potatoes grated - shred, 1 large onion, 1 tsp. salt, 3 tbsp. butter or margarine and 1 1/4 c. grated cheese cheddar or similar cheese, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Peel potatoes and chop onions. Combine potatoes, onion and salt. Heat 2 skillets. Heat
Butter until slightly brown. Add half of potato mixture to each skillet. Cook for about 8 minutes stirring once or twice. Add grated cheese and firmly press mixture. Cook, covered about 5 minutes until bottom is crispy. Turn over and cook 5 more minutes. Low to medium heat.
