Potato Puff
Potato Puff is an moderately easy dinner. Made with 2 lb. russet potatoes, peeled and cut in eighths, 1/4 c. soft butter, 2 large eggs, 1/2 c. sour cream and 1/2 c. milk, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

In a 3-quart saucepan bring 2 cups water to boil; add potatoes; return to boil.
Cover and cook until tender, about 10 minutes.
Drain well.
Using food mill or ricer, force potatoes into the clean dry 3-quart saucepan.
Stir in butter until melted. In small bowl, beat together eggs, sour cream, milk, salt and pepper until blended.
Gradually stir into potatoes; add scallions.
