Potato Poncho
Potato Poncho is an easy dinner. Made with 2 lb. ground beef, 3 c. shredded cheese, margarine (amount your choice), 2 pkg. taco mix and 6 medium potatoes, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Either bake potatoes in microwave or oven.
Use whichever is more convenient to you.
Microwave is quicker; 12 minutes on each side of the potato.
Check for doneness.
Slice potatoes and put your amount of butter or margarine on them.
Set aside.
Brown ground beef.
Drain.
Mix with taco packets, by the directions. Lay sliced potatoes in baking dish.
Cover with taco meat.
Cover with shredded cheese.
Place in oven at 350Β° for 15 minutes or until bubbly.
