Potato Pinwheel Candy is an easy dinner. Made with 1 medium size potato, 2 1/2 to 3 1/2 c. powdered sugar and crunchy peanut butter, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Boil potato until done.
While still hot, mash thoroughly. Add powdered sugar, small amounts at a time, until potato and powdered sugar mixture is at a rolled dough stage.
Roll out to 1/4-inch thickness.
Spread evenly with peanut butter and roll up. Chill 5 to 6 hours or overnight.
Slice into 1/4 or 1/2-inch pieces.
Serve cold.
