Potato Peanut Butter Roll Candy is an easy dinner. Made with 1 (32 oz.) pkg. confectioners sugar, 2/3 c. mashed potatoes, chilled, 2 tbsp. butter or margarine, softened, 1 tbsp. vanilla and 1 (8 oz.) jar creamy peanut butter, this recipe delivers authentic, satisfying flavors. In a large bowl, combine sugar, potatoes, butter and vanilla; mix well.
Will be very thick, like play dough.
Place between 2 pieces of waxed paper and roll out into a 9 x 14-inch rectangle. Spread peanut butter evenly across.
Gently roll up.
Wrap in waxed paper; chill.
Chill 2 hours; cut into 1/2-inch slices to serve.
