Potato Filling
Potato Filling is an moderately easy dinner. Made with 12 large potatoes, boiled and mashed, 1/2 loaf white bread, cubed, 1/2 bunch celery, diced, 4 onions, diced and 1/2 c. parsley, minced, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Melt 1/4 pound butter in each of 2 skillets.
In one, brown the bread cubes until crisp.
In the other, stir-fry onions and celery until soft and translucent.
Mash the potatoes, adding the milk, eggs, salt and parsley.
Fold in the celery and onion mixture and the bread cubes carefully so the cubes remain whole. Pour into a large baking dish and bake at 350Β° for 1/2 hour.
