Combine sugar, shortening, eggs and potatoes.
Add buttermilk in which soda has been dissolved.
Add dry ingredients and vanilla.
Let set in refrigerator for 1 hour.
Roll on floured board to 1/2-inch thickness.
Cut with donut cutter and fry in deep fat until brown.
