Potato Casserole
Potato Casserole is an easy dinner. Made with 3 large idaho potatoes or 6 medium, 1/3 c. chopped green onions, 1/4 c. melted butter or margarine, 1 1/4 tsp. salt and 2 c. sour cream, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Boil potatoes with jackets on until tender.
Let cool completely.
When ready to cook, peel and coarsely shred the potatoes.
Add green onions (use some of the tops for color).
Add salt, butter and sour cream, then toss very lightly.
Bake in 9 x 13-inch casserole at 350Β° for 30 to 40 minutes, until golden and crispy on the edges.
