Potato Casserole
Potato Casserole is an moderately easy dinner. Made with 3 lb. potatoes (peeled, diced and cooked for 10 minutes), 1/2 lb. velveeta cheese, 1 can cream of chicken soup, 1 small can evaporated milk and 1 small carton sour cream, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Drain potatoes and place in 13 x 9 casserole dish.
In saucepan over low heat, combine chicken soup, milk and cheese, stirring until cheese melts.
Remove from heat and fold in sour cream, chives and parsley.
Pour mixture over potatoes.
Bake at 350 degrees for 25 - 30 minutes.
