Potato Cake
Potato Cake is an moderately easy dinner. Made with 3 eggs, separated, 2 c. sugar, 1 c. butter, 1 c. milk and 1 c. nuts, chopped, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Cream together the butter and sugar.
Add the beaten egg yolks the cocoa and the mashed potatoes.
Alternate the milk and flour in which the baking soda, nutmeg and cinnamon have been sifted together, having reserved 1/4 cup of flour for the nut meats. Fold in floured nuts and the stiffly beaten egg whites.
Pour into buttered and floured cake pans.
Bake at 375Β° for 45 minutes.
