Possum Pie
Possum Pie is an moderately easy dinner. Made with 30 ritz crackers, 3 egg whites, 1 c. sugar, 1 tsp. vanilla and 3/4 c. chopped pecans, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Crush Ritz crackers.
Beat egg whites until stiff.
Mix in sugar, vanilla, crackers and pecans.
Put in Pyrex dish and cook for 25 minutes at 325Β°.
Cool completely and add Cool Whip. Sprinkle with coconut.
