Porcupine Meatballs
Porcupine Meatballs is an moderately easy dinner. Made with 2 eggs, beaten, 1/2 c. rice (uncooked), 1 medium onion, chopped, 1 lb. ground beef and 1 tsp. black pepper, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Mix first 6 ingredients together.
Shape into small balls. Brown in 1/2 cup cooking oil.
When brown, pour off oil.
Top each ball with catsup.
Add vegetables.
Cover with water.
Cook in a covered container over low heat for 1 to 1 1/2 hours.
I like to use an electric frying pan.
Serves 6 to 8.
