Porcupine Balls
Porcupine Balls is an moderately easy dinner. Made with 3 lb. hamburger, 1 c. quick rice, 1 bell pepper, 1 onion and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
In large mixing bowl, add hamburger, rice, eggs and spices. Mix well.
Roll into golf-ball size balls.
Place in a large saucepan.
Cut bell pepper into strips and onion into rings.
Add to saucepan.
(If you like spicy foods, at this time, add more spices.)
Cover with tomato juice.
Cook over medium heat until balls are done in middle, approximately 1 to 1 1/2 hours.
