Discard all imperfect kernels and put the popped corn into a large pan.
Cook sugar, salt, vanilla, syrup and water to the medium crack stage (280Β°), stirring constantly.*
Add food coloring; stir again and pour over popcorn (careful, it's hot). While pouring over popcorn, mix and move popcorn around carefully to cover each kernel.
