Polynesian Pork
Polynesian Pork is an impressive dinner you can prepare in about 1 hour 52 minutes. Made with pork chops, (4 3/4 oz.) jar strained plum baby food, c. flaked coconut, . water and . vinegar, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Trim any excess fat from chops.
Brown in 1 tablespoon cooking oil, season meat with salt to taste.
Combine plums, coconut, water, vinegar, soy sauce, 1/2 teaspoon salt, ginger, lemon peel and pepper, pour over chops.
Cover and simmer 35 to 40 minutes or until meat is tender.
Remove to warm platter with sauce spooned over.
Makes 6 servings.
