Polk Salad
Polk Salad is an moderately easy salad you can prepare in about 1 hour 12 minutes. Made with polk greens, onions, eggs and salt to taste, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
π¨βπ³ Instructions
Gather polk greens in spring of year.
Look and wash well. Parboil greens; rinse.
Boil again.
Put 2 tablespoons of soda in water, rinse well.
Squeeze out all the water you can.
Put greens and cut up onion in skillet with fair amount of Crisco.
Cook until onion is translucent.
I like to scramble 3 or 4 eggs, then mix with cooked greens.
