Plum Cake
Plum Cake is an moderately easy dinner. Made with 1 c. granulated sugar, 1 stick margarine or butter, 2 whole eggs, 1/2 tsp. salt and 1 c. milk, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Mix sugar, margarine, salt and eggs together until creamy.
Add milk and flour alternately with baking powder and soda mixed in the flour.
Add vanilla last and beat about 200 strokes.
Grease and flour 9-inch pans.
Put just 4 tablespoons of batter into 9-inch pans.
This makes a thin layer of batter over the bottom.
Put fruit on top until about 1/2-inch from top of pan.
Pour 2 tablespoons of melted butter over top of fruit; sprinkle 2 or 3 tablespoons sugar over all.
Top with cinnamon.
Bake at 350Β° for 40 minutes.
Cool 15 minutes and dust with powdered sugar.
Makes 3 to 4 cakes.
