Plantation Pecan Pie is an moderately easy dinner. Made with 1/2 c. shortening (part butter), 2/3 c. sugar (3 tbsp. sugar), 3 eggs, 2 tbsp. flour and 3/4 c. chopped raisins, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Beat 2 eggs and 1 egg yolk.
Stir in flour.
Beat remaining egg white in separate bowl until it holds peaks.
Beat in 3 tablespoons sugar.
Fold into first mixture.
Gradually add raisins, nuts and vanilla.
Put in an unbaked pie shell.
Bake at 425° for 10 minutes.
Lower temperature to 350°; continue baking for 30 minutes.
Cool; decorate with Cool Whip.
