Pizzelles
Pizzelles is an moderately easy dinner. Made with 2 c. all-purpose flour, 1 c. sugar, 2 tsp. baking powder, 3/4 c. margarine or butter, melted and cooled and 1 tbsp. anise extract or vanilla or lemon extract, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Grease pizzelle iron.
Heat pizzelle iron according to manufacturer's directions.
(You can also use a krumkake iron instead of pizzelle iron.)
Mix all ingredients.
Drop 1 tablespoon batter onto heated pizzelle iron and close iron.
Bake about 30 seconds or until golden brown.
Carefully remove pizzelle from iron; cool.
Repeat with remaining batter.
Makes about 3 1/2 dozen, 75 calories per cookie.
