Pistachio Microwave Cake
Pistachio Microwave Cake is an easy dinner. Made with 1 1/4 c. water, 3 egg whites, 1/4 c. vegetable oil, 1 regular box white cake mix and 1 pkg. pistachio instant pudding, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Grease 9 x 9 x 2-inch or tube microwavable cake pan with solid shortening and line with waxed paper.
Blend water, egg whites and oil.
Stir in cake mix and pudding until well blended.
Microwave on turntable 9 minutes.
Let stand 5 minutes.
Remove from microwave and cool until warm to touch.
Turn out on cake plate and remove waxed paper.
Frost with cream cheese frosting, if desired.
