Pioneer Skillet Bread
Pioneer Skillet Bread is an moderately easy dinner. Made with 2/3 c. white or yellow cornmeal, 1/4 tsp. baking soda, 1 c. buttermilk, 4 tbsp. vegetable oil and 1 tsp. baking powder, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Preheat oven to 425Β°.
Prepare a fire so you will have hot coals on the hearth.
Put dry ingredients unsifted in bowl.
Mix in buttermilk and egg.
Add 2 tablespoons of vegetable oil and mix thoroughly.
Put remaining oil in 9-inch cast-iron skillet. (If baking in fireplace, use cast-iron skillet with legs, called spider pan.)
Heat skillet in oven or over coals for 5 to 10 minutes.
In oven, pour batter into skillet and bake 25 to 30 minutes or until brown.
Cut into wedges and serve with butter.
