Pinto Bean Ragout
Pinto Bean Ragout is an moderately easy dinner. Made with 1 slice bacon, 1/2 c. chopped onion, 1 medium carrot, cut into 1/4-inch slices, 1/4 tsp. salt and 1/4 tsp. pepper, this recipe delivers authentic, satisfying flavors. Simple to make and full of bold, satisfying flavors.

Cook bacon in large skillet until crisp.
Drain on paper towel.
Pour off all but 1 tablespoon drippings.
Add onion, carrot, salt, pepper and thyme.
Cook, stirring occasionally, over medium heat until onion is tender, 5 minutes.
Stir in tomato paste and garlic; cook 1 minute.
Add remaining ingredients. Crumble bacon and stir into pan; simmer 5 minutes.
Makes 2 1/2 cups.
