Wash beans and place in a large pot.

Add water.

Boil for 2 minutes.

Remove from heat.

Let stand, covered, 2 hours.

Drain and rise.

Add fresh water to cover.

Add 1 teaspoon of salt and then hocks.

Bring to a boil, then simmer, covered, for 1 hour. Remove skin and bones from hocks.

Return meat to a pot.

Stir in 1/2 teaspoon of salt and rest of ingredients.

Simmer 1 1/2 hours, stirring occasionally, until done.
