Pinto Bean Pie
Pinto Bean Pie is an moderately easy dinner. Made with 1/2 c. pinto beans, drained, 1 1/2 c. sugar (white), 1 stick margarine, 1/2 c. coconut and 2 eggs, well beaten, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
π¨βπ³ Instructions
Drain and mash beans; set aside.
Combine sugar and margarine; mix well.
Add the beans, coconut and vanilla.
Add beaten eggs to mixture.
Pour in 9-inch pie shell.
Bake at 350Β° for 1 hour. This makes one pie, but one can of pinto beans and one can of coconut makes three pies.
All you do is double the mixture.
