Pinto Bean Casserole
Pinto Bean Casserole is an moderately easy dinner. Made with 2 lb. ground beef, 1 (16 oz.) can pinto beans, 1 can red kidney beans, 1 can tomatoes, chopped and 1 (15 oz.) can tomato sauce, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

In a large skillet, saute onions and peppers in a small amount of oil.
Add ground beef and brown.
Drain fat, and then add tomatoes, tomato sauce and beans.
Mix well.
Pour into a large casserole dish.
Mix the cornbread mix according to directions on package and pour over bean mixture.
Bake in a 425Β° oven (preheated) until golden brown and bubbly, approximately 30 to 40 minutes.
