Pineapple Refrigerator Cake
Pineapple Refrigerator Cake is an moderately easy dinner. Made with 1 angel food cake, 1 envelope knox gelatin, 2 c. milk, 1 c. sugar and 2 tbsp. flour (all-purpose), this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Dissolve gelatin in 1/2 cup cold water. Set aside.
Mix flour, salt, sugar and milk.
Cook until warm.
Add beaten egg yolks. Continue cooking until thick. Remove from heat.
Add gelatin, vanilla and almond extract.
Beat egg whites stiff. Fold into custard.
Add the pineapple, thoroughly drained, to the custard before folding in egg whites.
