Pineapple Drop Cookies
Pineapple Drop Cookies is an moderately easy dinner. Made with 1 (8 3/4 oz.) can crushed pineapple or 1 c., drained (keep juice), 1/2 c. crisco, 1 c. brown sugar, 1 egg and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Use mixer on medium speed to mix Crisco and brown sugar.
Add egg and vanilla.
Continue to mix until well blended.
Add drained pineapple to mixture; then add flour, baking powder, baking soda and salt.
Bake 8 to 9 minutes at 400Β° on lightly greased cookie sheets.
While cookies are warm, glaze with confectioners sugar and pineapple juice, mixed together to make thin glaze.
Makes approximately four dozen.
