Pineapple Coconut Cake
Pineapple Coconut Cake is an moderately easy dinner. Made with 1/2 c. butter, 2 c. sugar, 4 egg yolks, 1 c. crushed pineapple and 2 1/2 c. cake flour, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cream butter and sugar; blend well.
Add well beaten egg yolks, beat until mixture is light and then add pineapple.
Do not drain off juice.
Sift flour together with baking powder and salt. Add to first mixture.
Then add vanilla and coconut.
Fold in beaten egg whites.
Bake in a 375Β° oven for 25 to 30 minutes. Yields three 9-inch layers.
