Pineapple Chicken Curry
Pineapple Chicken Curry is an moderately easy dinner. Made with 3 whole chicken breasts, 1 tsp. salt, 1/4 c. onion, chopped, 1/4 c. margarine and 1 green pepper, sliced, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Bone and slice the chicken breasts.
Melt butter in large skillet over medium heat.
Add strips of chicken; sprinkle with salt and cook, stirring constantly, for 3 minutes.
Add onion, green pepper, nuts, curry and nutmeg.
Cook 2 minutes longer, stirring constantly.
Add drained pineapple with 1/2 cup of syrup, water and bouillon cube. Reduce heat, cover and cook 4 minutes. Blend cornstarch with 2 tablespoons cold water.
Stir all at once into skillet.
Cook, stirring rapidly until thickened.
Serve with rice.
