Dissolve gelatin in the pineapple juice.
Bring pineapple, sugar and lemon juice to a boil.
Add this to gelatin mixture. Set aside until it starts to jell.
Grate the cream cheese and whip the cream until stiff.
Add to gelatin when it thickens.
Will serve about 20.
