Pineapple Cheese Salad
Pineapple Cheese Salad is an moderately easy dinner. Made with 1 envelope unflavored gelatin, dissolved in 2/3 c. cold water, 1 small can crushed pineapple, 1/2 c. sugar, 3 tbsp. lemon rind and 1 (5 oz.) glass pimento cheese spread, this recipe delivers authentic, satisfying flavors. Drain syrup from pineapple into small pan, being careful to drain well.
To the syrup, add sugar and simmer for 5 minutes.
Add lemon juice and cheese spread.
Add dissolved gelatin and chill until partially set.
Stir in pineapple, nuts and oranges. Fold in Cool Whip and pour into 9-inch square pan.
Chill until firm.
